  • 1 lb Ground Lamb or Beef or ground turkey for a leaner option
  • 1 cup Breadcrumbs (gluten-free if needed)
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 1 tsp Salt, to taste
  • 1 tsp Black Pepper, to taste
  • 1 large Egg for binding
  • 1 tbsp Olive Oil for drizzling
  • 2 cups Cooked Quinoa or Rice
  • 1 cup Cucumber, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 small Red Onion, sliced
  • 1 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Parsley, chopped, for garnish
  • 2 Lemon Wedges for serving
  • 1 cup Greek Yogurt
  • 1 small Cucumber, grated
  • 1 tbsp Dill
  • 1 clove Garlic
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground lamb or beef, breadcrumbs, onion, garlic, oregano, cumin, salt, pepper, and egg. Mix gently.
  3. Shape mixture into 1-inch meatballs and arrange on the baking sheet.
  4. Drizzle meatballs with olive oil and bake for 20 minutes until golden brown.
  5. Prepare tzatziki sauce by mixing Greek yogurt, grated cucumber, dill, garlic, lemon juice, salt, and pepper in a bowl.
  6. In serving bowls, layer cooked quinoa or rice, cucumber, tomatoes, and red onion.
  7. Add baked meatballs on top of layered ingredients.
  8. Finish with tzatziki sauce, crumbled feta, and parsley. Serve with lemon wedges.
