  • Total Time: 25 minutes
  • Yield: 4–6 servings

Ingredients

Scale
  • 12 oz rotini pasta
  • 14 oz smoked sausage, sliced into rounds
  • 1 1/2 cups shredded white cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 cups milk
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 1/2 cup roasted red peppers, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sausage slices and brown until golden on both sides. Remove and set aside.
  3. In the same pan, melt butter and sauté minced garlic until fragrant (about 30 seconds).
  4. Pour in chicken broth and milk, scraping up browned bits from the pan.
  5. Stir in ranch seasoning mix and bring to a gentle simmer.
  6. Add rotini pasta, cover, and cook, stirring occasionally, until al dente (12–15 minutes).
  7. Lower heat and gradually stir in shredded white cheddar cheese until smooth and creamy.
  8. Fold in baby spinach and roasted red peppers, allowing spinach to wilt slightly.
  9. Return sausage to the pan, stir everything together, and season with salt and pepper to taste. Serve warm.
