- 1 pound loaf sourdough or French bread, cut into chunks
- 8 large eggs
- 2 cups milk (whole or 2%)
- 1/2 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, unpacked
- 2 teaspoons vanilla extract
- 1 1/2 teaspoon ground cinnamon
- 6-7 medium bananas, chopped
- Streusel Topping:
- 3/4 cup all-purpose flour
- 3/4 cup brown sugar, firmly packed
- 1 teaspoon cinnamon
- 1/2 cup unsalted butter, cut into pieces
Instructions
- Grease a 9×13-inch casserole dish. Place bread chunks in a large bowl and set aside.
- In another bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla extract, and cinnamon.
- Pour egg mixture over bread chunks. Add chopped bananas and gently stir to combine.
- Pour mixture into prepared casserole dish, spread evenly, cover, and refrigerate overnight.
- Preheat oven to 350°F (176°C) when ready to bake. Bake 35-40 minutes until set.
- Meanwhile, prepare streusel by combining flour, brown sugar, and cinnamon. Add butter and mash until crumbly.
- Remove casserole from oven, crumble streusel over top, and continue baking 5 more minutes until topping is set.
- Serve warm with syrup.
Notes
- Slice bananas and cut each slice into quarters for best texture.
- Use fresh bread to avoid soggy casserole.
