This banana French toast casserole is an easy make-ahead breakfast full of banana flavor. Perfect for holiday brunches or a weekend treat.

Ingredients

  • 1 pound loaf sourdough or French bread, cut into chunks
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, unpacked
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoon ground cinnamon
  • 6-7 medium bananas, chopped
  • Streusel Topping:
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar, firmly packed
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, cut into pieces

Instructions

  1. Grease a 9×13-inch casserole dish. Place bread chunks in a large bowl and set aside.
  2. In another bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla extract, and cinnamon.
  3. Pour egg mixture over bread chunks. Add chopped bananas and gently stir to combine.
  4. Pour mixture into prepared casserole dish, spread evenly, cover, and refrigerate overnight.
  5. Preheat oven to 350°F (176°C) when ready to bake. Bake 35-40 minutes until set.
  6. Meanwhile, prepare streusel by combining flour, brown sugar, and cinnamon. Add butter and mash until crumbly.
  7. Remove casserole from oven, crumble streusel over top, and continue baking 5 more minutes until topping is set.
  8. Serve warm with syrup.

Notes

  • Slice bananas and cut each slice into quarters for best texture.
  • Use fresh bread to avoid soggy casserole.
