- 8 slices bread, cubed
- 1 cup whole milk
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- 1/2 lb breakfast sausage, cooked and crumbled
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter, for greasing
Instructions
- Grease the pressure cooker insert with butter.
- In a large bowl, whisk eggs, milk, salt, and black pepper until well combined.
- Add bread cubes, cooked sausage, onions, and bell peppers to the mixture. Stir gently.
- Pour mixture into the greased pressure cooker insert.
- Sprinkle cheddar cheese evenly on top.
- Close the lid securely and set pressure cooker to cook for 55 minutes.
- Carefully release pressure once cooking is complete.
- Let casserole sit a few minutes, then slice and serve warm.
- Store leftovers in the refrigerator and reheat as needed.
