- 1 pound lean ground beef
- 2 tablespoons butter
- 1 small yellow onion, diced
- 1 small green bell pepper, diced
- 8 ounces brown mushrooms, minced
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1 tablespoon cornstarch
- 1 cup beef broth
- 8 ounces Provolone cheese slices, chopped (use 6 oz if you don’t want it very cheesy)
- 6 brioche hamburger buns
Instructions
- Add ground beef to a large cast iron skillet and brown until a deep crust forms before breaking it apart.
- Stir beef and continue cooking until about half the beef has a deep brown crust. Remove beef (leaving fat).
- Add butter, onions, peppers, and mushrooms. Let brown 1–2 minutes before stirring, repeat once more.
- Add beef back to the pan.
- Mix beef broth and cornstarch in a cup, then add to pan along with ketchup, Worcestershire, salt, and pepper.
- Cook until the mixture is slightly liquidy (about 75% of beef above liquid), 3–5 minutes.
- Turn off heat, stir in provolone cheese gradually until melted and creamy.
- Serve hot on toasted brioche buns.
Notes
- Toast your buns for extra texture and flavor.
- For extra cheesiness, melt additional provolone on top before serving.
