Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 8 ounces brown mushrooms, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon cornstarch
  • 1 cup beef broth
  • 8 ounces Provolone cheese slices, chopped (use 6 oz if you don’t want it very cheesy)
  • 6 brioche hamburger buns

Instructions

  1. Add ground beef to a large cast iron skillet and brown until a deep crust forms before breaking it apart.
  2. Stir beef and continue cooking until about half the beef has a deep brown crust. Remove beef (leaving fat).
  3. Add butter, onions, peppers, and mushrooms. Let brown 1–2 minutes before stirring, repeat once more.
  4. Add beef back to the pan.
  5. Mix beef broth and cornstarch in a cup, then add to pan along with ketchup, Worcestershire, salt, and pepper.
  6. Cook until the mixture is slightly liquidy (about 75% of beef above liquid), 3–5 minutes.
  7. Turn off heat, stir in provolone cheese gradually until melted and creamy.
  8. Serve hot on toasted brioche buns.

  • Toast your buns for extra texture and flavor.
  • For extra cheesiness, melt additional provolone on top before serving.
