Instructions

  1. Heat olive oil in a large skillet over medium heat. Cook chicken until golden and fully cooked, then set aside.
  2. Sauté onion, garlic, and red bell pepper until softened.
  3. Add pineapple and cook 2 minutes.
  4. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil, reduce heat to low, cover, and simmer 18–20 minutes until rice is cooked.
  5. Return chicken to skillet, mix well, and heat through.
  6. Garnish with green onions and sesame seeds before serving.
