  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini turkey pepperoni slices (reserve some for topping)
  • 1/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Pinch of salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, whisk together cottage cheese and eggs until smooth.
  3. Stir in mozzarella, most of the turkey pepperoni, parmesan, Italian seasoning, garlic powder, salt, and pepper.
  4. Pour mixture into the baking dish and top with remaining pepperoni.
  5. Bake for 30–35 minutes, until set and golden brown.
  6. Cool slightly before slicing. Serve with marinara sauce if desired.
