- 2 cups cottage cheese
- 3 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup mini turkey pepperoni slices (reserve some for topping)
- 1/4 cup grated parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Pinch of salt and pepper
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- In a large bowl, whisk together cottage cheese and eggs until smooth.
- Stir in mozzarella, most of the turkey pepperoni, parmesan, Italian seasoning, garlic powder, salt, and pepper.
- Pour mixture into the baking dish and top with remaining pepperoni.
- Bake for 30–35 minutes, until set and golden brown.
- Cool slightly before slicing. Serve with marinara sauce if desired.

- Add spinach or mushrooms for extra flavor.
- Freeze baked slices for easy meal prep.
- Swap cottage cheese with ricotta for a creamier texture.
