  • 2 cups (300 g) self-raising flour
  • 1 cup (250 g) full-fat plain Greek yogurt
  • Toppings:
  • 1/3 cup (90 g) tomato paste (concentrated puree)
  • 1 cup (125 g) freshly shredded mozzarella
  • 1/2 cup (80 g) pepperoni

Instructions

  1. Preheat oven to 200°C (400°F) or 180°C (350°F) fan-forced. Line a baking tray with parchment paper.
  2. In a large bowl, combine self-raising flour and Greek yogurt. Mix until large flakes form, then knead by hand 1–2 minutes until soft dough forms.
  3. Roll out dough to 1 cm (1/2 inch) thickness and cut rounds using a mug or cookie cutter.
  4. Place dough rounds on prepared tray. Spread tomato paste on each round.
  5. Top with shredded mozzarella and pepperoni.
  6. Bake for 12–14 minutes until dough is golden and cheese has melted.
  7. Allow pizzas to cool slightly before serving. Optional: freeze for later use.
