- Dough:
- 2 cups (300 g) self-raising flour
- 1 cup (250 g) full-fat plain Greek yogurt
- Toppings:
- 1/3 cup (90 g) tomato paste (concentrated puree)
- 1 cup (125 g) freshly shredded mozzarella
- 1/2 cup (80 g) pepperoni
Instructions
- Preheat oven to 200°C (400°F) or 180°C (350°F) fan-forced. Line a baking tray with parchment paper.
- In a large bowl, combine self-raising flour and Greek yogurt. Mix until large flakes form, then knead by hand 1–2 minutes until soft dough forms.
- Roll out dough to 1 cm (1/2 inch) thickness and cut rounds using a mug or cookie cutter.
- Place dough rounds on prepared tray. Spread tomato paste on each round.
- Top with shredded mozzarella and pepperoni.
- Bake for 12–14 minutes until dough is golden and cheese has melted.
- Allow pizzas to cool slightly before serving. Optional: freeze for later use.

- Customize toppings to taste: vegetables, different cheeses, or cooked meats.
