- 8 slices of sourdough bread
- 1 pound of thinly sliced roast beef
- 8 slices of sharp cheddar cheese
- 4 tablespoons of unsalted butter
- 1 tablespoon of Dijon mustard (optional)
- Salt and pepper to taste
- Fresh arugula or spinach (optional, for garnish)
Instructions
- Preheat a large non-stick skillet over medium heat.
- Spread 1 tablespoon of butter on one side of each bread slice.
- Place a slice of bread butter-side down on the skillet.
- Spread Dijon mustard if using. Layer roast beef and two slices of cheddar cheese.
- Top with another bread slice, buttered side up.
- Cook 3-5 minutes until golden brown and cheese starts to melt.
- Carefully flip and cook another 3-5 minutes.
- Ensure cheese is fully melted and both sides are crispy.
- Remove from skillet and let cool slightly.
- Slice in half or quarters and serve warm.
Notes
- Optional: Add fresh arugula or spinach for a fresh garnish.
- Serve with pickles or chips for a complete meal.
