Ingredients

  • 8 slices of sourdough bread
  • 1 pound of thinly sliced roast beef
  • 8 slices of sharp cheddar cheese
  • 4 tablespoons of unsalted butter
  • 1 tablespoon of Dijon mustard (optional)
  • Salt and pepper to taste
  • Fresh arugula or spinach (optional, for garnish)

Instructions

  1. Preheat a large non-stick skillet over medium heat.
  2. Spread 1 tablespoon of butter on one side of each bread slice.
  3. Place a slice of bread butter-side down on the skillet.
  4. Spread Dijon mustard if using. Layer roast beef and two slices of cheddar cheese.
  5. Top with another bread slice, buttered side up.
  6. Cook 3-5 minutes until golden brown and cheese starts to melt.
  7. Carefully flip and cook another 3-5 minutes.
  8. Ensure cheese is fully melted and both sides are crispy.
  9. Remove from skillet and let cool slightly.
  10. Slice in half or quarters and serve warm.
