  • 4 boneless, skinless chicken breasts (about 600g)
  • 2 large fresh oranges (juice and zest)
  • 4 garlic cloves (minced)
  • 1/4 cup honey (85g)
  • 1/4 cup low-sodium soy sauce (60ml)
  • 2 tbsp extra virgin olive oil (30ml)
  • 1 tbsp fresh ginger (grated)

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together the juice and zest of the oranges, honey, soy sauce, minced garlic, ginger, and olive oil.
  3. Place chicken in a zip-top bag or shallow dish. Pour marinade over the chicken, ensuring it’s fully coated. Marinate for at least 30 minutes.
  4. Transfer the chicken to the prepared baking dish, reserving marinade. Bake uncovered for 25–30 minutes until cooked through (internal temperature should reach 165°F).
  5. Simmer reserved marinade in a saucepan on medium heat until thickened (about 10 minutes). Drizzle over cooked chicken before serving.
