Ingredients

- 4 ripe pears, halved and cored
- 4 oz (115 g) blue cheese, crumbled
- ¼ cup (30 g) chopped toasted pistachios
- 1–2 tbsp (15–30 ml) honey
- 1 tsp (5 ml) lemon juice
- Pinch of cinnamon (optional)
- Fresh thyme or mint for garnish (optional)
Instructions
- Prepare the pears:
Preheat oven to 375°F (190°C). Place pear halves cut-side up in a baking dish. Drizzle with lemon juice and a small amount of honey. - Roast:
Bake 20–25 minutes until pears are tender but still hold shape. - Assemble the dish:
Sprinkle crumbled blue cheese over warm pears. Top with toasted pistachios. - Finish & serve:
Drizzle with additional honey and garnish with fresh thyme or mint if desired. Serve warm.
Notes
- Add a pinch of cinnamon before roasting for extra warmth.
- Serve with a scoop of vanilla ice cream for a dessert version.
- Use walnuts or pecans as an alternative to pistachios.
