Ingredients

  • 4 ripe pears, halved and cored
  • 4 oz (115 g) blue cheese, crumbled
  • ¼ cup (30 g) chopped toasted pistachios
  • 1–2 tbsp (15–30 ml) honey
  • 1 tsp (5 ml) lemon juice
  • Pinch of cinnamon (optional)
  • Fresh thyme or mint for garnish (optional)

Instructions

  1. Prepare the pears:
    Preheat oven to 375°F (190°C). Place pear halves cut-side up in a baking dish. Drizzle with lemon juice and a small amount of honey.
  2. Roast:
    Bake 20–25 minutes until pears are tender but still hold shape.
  3. Assemble the dish:
    Sprinkle crumbled blue cheese over warm pears. Top with toasted pistachios.
  4. Finish & serve:
    Drizzle with additional honey and garnish with fresh thyme or mint if desired. Serve warm.

Notes

  • Add a pinch of cinnamon before roasting for extra warmth.
  • Serve with a scoop of vanilla ice cream for a dessert version.
  • Use walnuts or pecans as an alternative to pistachios.
