- 1 lb lean ground beef
- 3 medium red potatoes, diced

- 1 cup onions, caramelized
- 1 cup shredded Colby Jack or pepper jack cheese
- For the Sauce
- 1/2 cup mayonnaise
- 2 tbsp ketchup (low-sugar if desired)
- 1 tbsp Dijon mustard
- 1 tbsp Cajun seasoning
- Optional Toppings
- 1/2 cup pickles
- 1 cup lettuce or leafy greens
Instructions
- Dice the red potatoes, toss with olive oil and seasoning. Preheat air fryer to 400°F and cook for 16–18 minutes until crispy.
- Heat olive oil in a skillet over medium heat. Add onions and cook for 10–15 minutes until caramelized.
- Increase skillet heat, add ground beef, smash while cooking for 5–7 minutes. Season with salt and pepper.
- In a bowl, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning until smooth.
- Assemble bowls by layering potatoes, beef, onions, and cheese. Drizzle with sauce and add optional toppings.
Notes

- Swap potatoes for cauliflower or greens to reduce carbs further.
