  • 1 pound shrimp, peeled and deveined
  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a medium casserole dish with olive oil or nonstick spray.
  2. In a large skillet over medium heat, add olive oil. Sauté minced garlic for 1–2 minutes until fragrant.
  3. Add chopped spinach and cook for 2–3 minutes until just wilted. Remove from heat and set aside.
  4. In a large bowl, combine ricotta cheese, half the mozzarella, half the Parmesan, salt, black pepper, and optional red pepper flakes. Mix until smooth.
  5. Fold in shrimp and sautéed spinach until coated in the cheese mixture.
  6. Transfer the mixture to the prepared casserole dish, spreading evenly.
  7. Sprinkle the remaining mozzarella and Parmesan evenly over the top.
  8. Top with breadcrumbs for a golden, crispy finish.
  9. Bake for 25–30 minutes, until bubbly and golden brown.
  10. Cool for 5–10 minutes before serving to allow the casserole to set.
