- 1 pound shrimp, peeled and deveined
- 4 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup breadcrumbs
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a medium casserole dish with olive oil or nonstick spray.
- In a large skillet over medium heat, add olive oil. Sauté minced garlic for 1–2 minutes until fragrant.
- Add chopped spinach and cook for 2–3 minutes until just wilted. Remove from heat and set aside.
- In a large bowl, combine ricotta cheese, half the mozzarella, half the Parmesan, salt, black pepper, and optional red pepper flakes. Mix until smooth.
- Fold in shrimp and sautéed spinach until coated in the cheese mixture.
- Transfer the mixture to the prepared casserole dish, spreading evenly.
- Sprinkle the remaining mozzarella and Parmesan evenly over the top.
- Top with breadcrumbs for a golden, crispy finish.
- Bake for 25–30 minutes, until bubbly and golden brown.
- Cool for 5–10 minutes before serving to allow the casserole to set.
