- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup fresh spinach (optional, add during last 30 minutes of cooking)
- 0.5 cup chopped parsley for garnish
Instructions
- Lightly grease the slow cooker with cooking spray or olive oil.
- Place chicken breasts in the bottom of the slow cooker.
- In a medium bowl, whisk together chicken broth, heavy cream, Parmesan, garlic, Italian seasoning, salt, and black pepper.
- Pour the creamy mixture over the chicken, coating well.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked and tender.
- If using spinach, add it during the last 30 minutes and stir to combine.
- Serve shredded or whole with chopped parsley garnish over pasta, rice, or vegetables.
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
