- 12 oz spaghetti pasta
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 1/2 teaspoons Cajun seasoning
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Cook spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- Toss chicken with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until cooked through and golden brown. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan, mozzarella, and cheddar cheeses until melted and smooth.
- Add Italian seasoning and crushed red pepper flakes if using. Season with salt and pepper to taste.
- Return chicken to the skillet and stir to coat in the cheese sauce. Add cooked spaghetti and toss to combine thoroughly.
- Garnish with chopped parsley before serving.
Notes
- For extra smoky flavor, use smoked cheddar or smoked paprika along with the Cajun seasoning.
- Adjust Cajun seasoning to your spice preference.
- Reheat leftovers gently with a splash of milk or cream to restore creaminess.
