- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine chopped spinach, cream cheese, mozzarella, garlic, salt, and pepper to form a creamy filling.
- Slice each chicken breast horizontally to create a pocket, without cutting all the way through.
- Stuff each chicken breast with the spinach mixture. Secure with toothpicks if necessary.
- Heat olive oil in a pan over medium heat. Sear each stuffed chicken breast 3-4 minutes per side until golden brown.
- Transfer to a baking dish and bake for 20-25 minutes until cooked through.
- Let rest a few minutes before serving.

- Finely chop spinach for an even filling.
- Pound chicken breasts to an even thickness to ensure uniform cooking.
