Instructions

  1. Preheat oven to 375°F (190°C).

  3. Slice each chicken breast horizontally to create a pocket, without cutting all the way through.
  4. Stuff each chicken breast with the spinach mixture. Secure with toothpicks if necessary.
  5. Heat olive oil in a pan over medium heat. Sear each stuffed chicken breast 3-4 minutes per side until golden brown.
  6. Transfer to a baking dish and bake for 20-25 minutes until cooked through.
