Steak Potatoes and Goat Cheese is a complete one pan dinner recipe, so easy to make and delicious with just a few ingredients!

Ingredients

  • 1 pound petite gold potatoes
  • olive oil, kosher salt, pepper
  • 2 pounds steak of choice (I used strip steak)
  • 4 to 5 cloves garlic, minced
  • 2 tablespoons fresh chopped rosemary (or 1 tablespoon Italian seasoning)
  • 4 to 6 ounces goat cheese log

Instructions

  1. Cut the petite potatoes into fourths and put them on a sheet pan. Drizzle olive oil over top and season with kosher salt and pepper. Toss until evenly coated and bake in a 400°F oven for 25 to 30 minutes.
    Note: If any potatoes are very small, you may only need to cut them in half; they should be around 1-inch pieces.
  2. Cut the steak into cubes. Add the steak to the sheet pan with the potatoes along with more olive oil, kosher salt, pepper, garlic, and rosemary or Italian seasoning. Carefully toss until mixed.
  3. Cut the goat cheese into a few smaller pieces and add them to the sheet pan. Place back into the oven for 10 to 15 more minutes. Toss everything together before serving.

Notes

  • Optional: Serve with a fresh green salad or roasted vegetables for a complete meal.
