Make Sweet and Spicy Pickles at home with this easy recipe perfectly crunchy, flavorful, and ready in days.

  • Total Time: 20 minutes + 1–2 days marinating
  • Yield: 24 servings

Ingredients

Scale
  • 1 large jar (approx. 46 oz) of plain dill pickles
  • 2 cups sugar
  • 6 cloves garlic, minced
  • 2 teaspoons fresh jalapeño, chopped (adjust based on heat preference)
  • 2 teaspoons red pepper flakes
  • 2 teaspoons chopped parsley

Instructions

  1. Drain pickles, discard original juice, and slice into ¼–½ inch rounds. Retain the jar for storage.
  2. Layer ingredients: Start with 1–1½ cups pickles, add ½ cup sugar, 2 garlic cloves, ½ tsp red pepper flakes, and ½ tsp jalapeño.
  3. Repeat layers until ingredients are used. Sprinkle remaining sugar on top if any.
  4. Cover jar and let sit at room temperature ~1 hour until sugar liquifies. Shake or stir gently to distribute.
  5. Leave covered for several hours or overnight to meld flavors.
  6. After room temperature marination, stir again and refrigerate 1–2 days before serving.

Notes

  • Adjust jalapeño and red pepper flakes based on desired spice level.
  • Refrigerate after initial marination for best flavor and crunch.
  • Perfect as a snack, side dish, or topping for sandwiches and burgers.
