Ingredients

  • 1 lb. ground beef
  • 1/2 cup onion, finely chopped
  • 1/2 tablespoon minced garlic (2 cloves)
  • 2 cups red bell pepper, diced
  • 2 tablespoons taco seasoning, low sodium
  • 3 cups medium shell pasta (10 oz)
  • 1 tablespoon tomato paste
  • 2 cups beef broth
  • 2 cups water
  • 1 cup shredded cheddar cheese

Instructions

  1. Spray a large pan or pot with olive oil spray and heat over medium-high for 3 minutes.
  2. Add ground beef, onion, garlic, and bell peppers. Cook 10 minutes until beef is cooked through and no longer pink.
  3. Add dry pasta, taco seasoning, tomato paste, beef broth, and water. Stir, cover, and bring to a boil (about 5 minutes).
  4. Once boiling, remove cover, reduce heat to medium, and stir every few minutes for 10-12 minutes until pasta is cooked and liquid reduced.
  5. Remove from heat and stir in shredded cheddar cheese until melted and combined.

Notes

  • Storage: lasts in the fridge up to 4 days in an airtight container.
  • Other pasta shapes like rotini, penne, or farfalle work as well.
