- 1 lb. ground beef
- 1/2 cup onion, finely chopped
- 1/2 tablespoon minced garlic (2 cloves)
- 2 cups red bell pepper, diced
- 2 tablespoons taco seasoning, low sodium
- 3 cups medium shell pasta (10 oz)
- 1 tablespoon tomato paste
- 2 cups beef broth
- 2 cups water
- 1 cup shredded cheddar cheese
Instructions
- Spray a large pan or pot with olive oil spray and heat over medium-high for 3 minutes.
- Add ground beef, onion, garlic, and bell peppers. Cook 10 minutes until beef is cooked through and no longer pink.
- Add dry pasta, taco seasoning, tomato paste, beef broth, and water. Stir, cover, and bring to a boil (about 5 minutes).
- Once boiling, remove cover, reduce heat to medium, and stir every few minutes for 10-12 minutes until pasta is cooked and liquid reduced.
- Remove from heat and stir in shredded cheddar cheese until melted and combined.
Notes
- Storage: lasts in the fridge up to 4 days in an airtight container.
- Other pasta shapes like rotini, penne, or farfalle work as well.
