- 1 cup cottage cheese
- 1/2 cup protein powder (any flavor)
- 4 large eggs, room temperature
- 2/3 cup unsweetened cocoa powder
- 1/4 cup coconut oil, melted
- 1/2 cup coconut flour
- 3/4 cup sweetener (your preferred sweetener)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 cup chocolate chips or chopped dark chocolate
Instructions
- Preheat oven to 350°F (180°C). Line a 9×9-inch square baking pan with parchment paper or grease well.
- Blend cottage cheese until smooth in a blender or food processor.
- Add eggs, melted coconut oil, and vanilla extract; blend until combined.
- Add protein powder, cocoa powder, coconut flour, sweetener, and baking powder; blend until smooth.
- Pour batter into prepared pan and spread evenly.
- Sprinkle chocolate chips on top.
- Bake 20-22 minutes until set and a toothpick comes out with a few moist crumbs.
- Cool completely before cutting into 16 squares.
