- 4 tilapia fillets (about 1 lb)
- 1 cup roasted red peppers (jarred or homemade)
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1/4 cup low-sodium chicken broth
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and grease a baking dish with nonstick spray.
- Blend roasted red peppers, garlic, olive oil, lemon juice, salt, and pepper until smooth.
- Pour half of the sauce into the baking dish and place tilapia fillets on top.
- Coat the fillets with the remaining sauce.
- Bake for 20–25 minutes until fish flakes easily with a fork.
- Garnish with fresh basil or parsley before serving.
Notes
- For added flavor, sear tilapia in a hot pan for a golden crust before baking.
- Substitute tilapia with salmon or cod if desired.
- Store leftovers in an airtight container for up to three days; reheat gently on low heat.
