Instructions
- Melt the butter and olive oil in a large skillet over medium heat for 1-2 minutes, careful not to let it brown.
- Add orzo pasta and stir continuously for 3-4 minutes until lightly toasted.
- Pour in the chicken broth and bring to a simmer, cooking uncovered for 10-12 minutes.
- Remove from heat and stir in lemon zest and juice, followed by parmesan cheese.
- Season with salt and pepper, and serve warm garnished with additional lemon zest or parmesan.
