- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves garlic, minced
- 1/2 cup fresh lemon juice
- 1/2 cup grated Parmesan cheese
- 3 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- 1 cup low-sodium chicken broth
- 1 tbsp cornstarch mixed with 2 tbsp cold water
- 1 tbsp fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Chop parsley and mince garlic.
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Sear chicken 6–7 minutes per side until golden.
- Add garlic and chicken broth; simmer 5 minutes.
- Mix cornstarch with cold water, add to skillet, and stir until sauce thickens.
- Squeeze lemon juice over chicken and sprinkle Parmesan on top; let melt slightly.
- Garnish with parsley and serve.
Notes
- Serve with rice, pasta, or roasted vegetables.
- Use freshly grated Parmesan for best flavor.
- Adjust lemon juice and seasoning to taste.
