- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1/2–3/4 cup BBQ sauce
- 1 tbsp olive oil
- Salt and pepper
- Optional toppings: cheese, red onion, cilantro, Greek yogurt, avocado, green onions
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce sweet potatoes, rub with oil, salt, and pepper.
- Bake 40–50 minutes until tender.
- Heat chicken in a pan and mix with BBQ sauce.
- Slice sweet potatoes and fluff inside.
- Fill with BBQ chicken mixture.
- Add toppings and return to oven if melting cheese.
- Serve warm.
Notes
- You can use rotisserie chicken for convenience.
- Adjust BBQ sauce based on taste.
