- 1 cup fresh blueberries

- 1/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced

- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and dry salad greens, then place in a large bowl.
- Add blueberries, pistachios, feta, and sliced red onion.
- Whisk olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper until emulsified.
- Pour dressing over salad and toss gently to coat.
- Serve immediately or chill briefly before serving.
