- 2 cups mixed salad greens
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios
- 1/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and dry mixed greens thoroughly.
- Place greens in a large salad bowl.
- Rinse blueberries and add to bowl.
- Chop pistachios and sprinkle over salad.
- Add crumbled feta and sliced red onion.
- In a small bowl, whisk olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper until emulsified.
- Pour dressing over salad and toss gently.
- Serve immediately or chill briefly before serving.
