- 2 tablespoons butter
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 2 cups cooked shredded chicken
- 1 cup orzo pasta
- 2 1/2 cups beef broth
- 1/2 cup heavy cream
- 1 cup Gruyère cheese
- 1/2 cup mozzarella cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Caramelize onions in butter and olive oil for 20–25 minutes.
- Add garlic and thyme, cook until fragrant.
- Stir in chicken and orzo.
- Add broth, cream, salt, and pepper.
- Transfer to baking dish and cover with foil.
- Bake 25 minutes.
- Remove foil, add cheeses on top.
- Bake 10–15 more minutes until golden.
- Rest 5 minutes before serving.

- Slow caramelization is key for flavor.
- Add a splash of white wine for depth.
- Let it rest before serving for best texture.
