Instructions
- In a large bowl, combine chickpeas, avocado, cucumber, red onion, and parsley.
- In a small bowl, whisk olive oil, lemon juice, honey, salt, pepper, and garlic powder.
- Pour dressing over salad and gently toss to coat evenly.
- Let sit for 10 minutes to allow flavors to blend.
- Serve chilled.

- Add avocado just before serving to prevent browning.
- Replace honey with maple syrup or agave for vegan option.
