- 8 celery stalks
- 8 ounces cream cheese, softened
- 1/2 cup dried cranberries, chopped
- 1/2 cup pecans, toasted and chopped
- 2 tablespoons honey
- 1 teaspoon vanilla extract

- Salt to taste
- Fresh parsley for garnish (optional)
Instructions
- Wash celery and cut into 3–4 inch pieces, then pat dry.
- Mix cream cheese, cranberries, pecans, honey, vanilla, cinnamon, and salt until smooth and fluffy.
- Fill each celery piece generously with the mixture.
- Arrange on a platter and garnish with parsley if desired.
- Serve immediately or refrigerate until ready to serve.

- Use low-fat cream cheese for a lighter version.
- This can be made ahead and stored in the fridge.
- Adjust sweetness by varying honey.
