- 2 large cucumbers, diced
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup red onion, finely chopped (optional)
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup feta cheese, crumbled (optional)

- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash cucumbers and strawberries thoroughly. Dice cucumbers and slice strawberries.
- In a large bowl, combine cucumbers, strawberries, and red onion.
- Add chopped mint and feta cheese if using.
- In a small bowl, whisk olive oil, balsamic vinegar, salt, and pepper.
- Pour dressing over salad and gently toss to coat.
- Serve immediately for best freshness.
