Ingredients
- 2 lbs beef stew meat, cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 5 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 cup beef broth
- 1 tablespoon Worcestershire sauce
- Fresh parsley for garnish
Instructions
- Place the halved baby potatoes in the bottom of the slow cooker.
- In a large bowl, toss the beef stew meat with olive oil, onion powder, smoked paprika, thyme, parsley, salt, and black pepper.
- Add the seasoned beef over the potatoes in the slow cooker.
- In a small bowl, combine melted butter, minced garlic, beef broth, and Worcestershire sauce.
- Pour the garlic butter mixture evenly over the beef and potatoes.
- Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until the beef is tender and the potatoes are soft.
- Stir gently before serving to coat everything in the flavorful garlic butter sauce.
- Garnish with fresh parsley and serve warm.
Notes
- For extra flavor, sear the beef pieces in a skillet before adding them to the slow cooker.
- Baby Yukon Gold potatoes work especially well because they stay creamy and tender during slow cooking.
