  • 1.5 lbs sirloin steak, cut into thick bite-size cubes
  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 6 tbsp unsalted butter, divided
  • 8 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 tsp cracked black pepper
  • 1.5 tsp salt, divided
  • 1 cup heavy cream, warmed
  • 4 oz cream cheese, softened
  • 1.5 cups freshly shredded sharp cheddar
  • 1 cup freshly grated Parmesan
  • 1/2 cup whole milk
  • 2 tbsp fresh chives, chopped

Instructions

  1. Boil potatoes in salted water for 15–18 minutes until fork-tender, then drain.
  2. Mash potatoes with 3 tbsp butter, cream cheese, warmed heavy cream, milk, 1 tsp salt, and 1/2 tsp pepper.
  3. Fold in cheddar and Parmesan until creamy and smooth. Keep warm.
  4. Pat steak cubes dry and season with remaining salt, pepper, smoked paprika, and Italian seasoning.
  5. Melt 2 tbsp butter in a large pan over high heat.
  6. Sear steak bites for 2 minutes per side until deeply browned, then remove.
  7. Lower heat to medium, melt remaining butter and sauté garlic for 30 seconds.
  8. Return steak bites to pan and toss in garlic butter until coated.
  9. Serve steak bites over mashed potatoes, drizzle pan butter, and garnish with chives.
