- 1.5 pounds ripe tomatoes
- 6 tablespoons extra virgin olive oil
- 2 tablespoons red grape or red wine vinegar
- 1/3 cup red onion, finely chopped
- 1 clove garlic, minced
- 2 teaspoons basil, chopped
- 2 teaspoons parsley, chopped
- 1 teaspoon dill, chopped
- Salt and freshly ground black pepper
Instructions
- Slice tomatoes into 1/3 inch thick slices and place in a shallow dish.
- Whisk olive oil, vinegar, onion, garlic, herbs, salt, and pepper.
- Pour marinade over tomatoes evenly.
- Cover and refrigerate for at least 2 hours, flipping once.
- Serve chilled as a salad or side dish.
