Ingredients

- 14 oz (400g) farfalle pasta
- 3 tbsp olive oil
- 2 medium onions, sliced
- 3–4 cloves garlic, minced
- 14 oz (400g) mushrooms, sliced
- 10 oz (300g) spinach
- 1/2 cup vegetable broth
- 1 tsp Italian seasoning
- 1/2 cup parmesan cheese
- 3/4 cup heavy cream
- 1 tsp red pepper flakes (optional)
- Salt & pepper to taste
Instructions
- Cook pasta until al dente, then drain.
- Sauté onions in olive oil until soft, then remove.
- Cook mushrooms until golden, then set aside.
- Wilt spinach and remove excess moisture.
- Sauté garlic, add broth, cream, parmesan, seasoning, and stir until creamy.
- Return vegetables and pasta to the pan and mix well.
- Season and serve hot.
Notes
- Add pasta water or broth if sauce thickens too much.
- Use fresh vegetables for best flavor.
- Adjust spice level with chili flakes.
