Ingredients

  • 14 oz (400g) farfalle pasta
  • 3 tbsp olive oil
  • 2 medium onions, sliced
  • 34 cloves garlic, minced
  • 14 oz (400g) mushrooms, sliced
  • 10 oz (300g) spinach
  • 1/2 cup vegetable broth
  • 1 tsp Italian seasoning
  • 1/2 cup parmesan cheese
  • 3/4 cup heavy cream
  • 1 tsp red pepper flakes (optional)
  • Salt & pepper to taste

Instructions

  1. Cook pasta until al dente, then drain.
  2. Sauté onions in olive oil until soft, then remove.
  3. Cook mushrooms until golden, then set aside.
  4. Wilt spinach and remove excess moisture.
  5. Sauté garlic, add broth, cream, parmesan, seasoning, and stir until creamy.
  6. Return vegetables and pasta to the pan and mix well.
  7. Season and serve hot.

  • Add pasta water or broth if sauce thickens too much.
