  • 1 pound ground breakfast sausage
  • 1/2 cup diced onion
  • 1 jalapeno, minced
  • 1/3 cup all-purpose flour
  • 2 3/4 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 large eggs
  • 2 tablespoons butter
  • 2 cups cooked tater tots
  • 1 cup shredded Pepper Jack cheese
  • 1 cup shredded cheddar cheese
  • 10 fajita-size flour tortillas

Instructions

  1. Cook sausage in a skillet over medium-high heat until halfway browned.
  2. Add onion and jalapeno and continue cooking until sausage is fully cooked.
  3. Remove 1 cup of sausage mixture and set aside.
  4. Add flour to remaining sausage and cook 1 minute, stirring constantly.
  5. Slowly whisk in milk and simmer until thickened to form gravy.
  6. Scramble eggs in butter until slightly underdone.
  7. Mix reserved sausage, tater tots, eggs, and half the cheese in a bowl.
  8. Fill tortillas with mixture, roll, and place in baking dish.
  9. Pour sausage gravy over enchiladas and top with remaining cheese.
  10. Bake at 350°F for 30–40 minutes until bubbly and golden.

Notes

  • Do not fully cook eggs before baking for best texture.
  • Fresh shredded cheese melts better than pre-shredded.
  • Adjust spice level by increasing or reducing jalapeno.
