- 1 pound ground breakfast sausage
- 1/2 cup diced onion
- 1 jalapeno, minced
- 1/3 cup all-purpose flour
- 2 3/4 cups milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 10 large eggs
- 2 tablespoons butter
- 2 cups cooked tater tots
- 1 cup shredded Pepper Jack cheese
- 1 cup shredded cheddar cheese
- 10 fajita-size flour tortillas
Instructions
- Cook sausage in a skillet over medium-high heat until halfway browned.
- Add onion and jalapeno and continue cooking until sausage is fully cooked.
- Remove 1 cup of sausage mixture and set aside.
- Add flour to remaining sausage and cook 1 minute, stirring constantly.
- Slowly whisk in milk and simmer until thickened to form gravy.
- Scramble eggs in butter until slightly underdone.
- Mix reserved sausage, tater tots, eggs, and half the cheese in a bowl.
- Fill tortillas with mixture, roll, and place in baking dish.
- Pour sausage gravy over enchiladas and top with remaining cheese.
- Bake at 350°F for 30–40 minutes until bubbly and golden.
Notes
- Do not fully cook eggs before baking for best texture.
- Fresh shredded cheese melts better than pre-shredded.
- Adjust spice level by increasing or reducing jalapeno.
- This dish can be assembled ahead and baked later.
