- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, cubed
- 1 lb green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Whisk honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper.
- Marinate chicken for 30 minutes or longer.
- Preheat oven to 400°F.
- Roast sweet potatoes for 15 minutes.
- Add chicken and green beans to pan.
- Pour remaining marinade over everything.
- Bake 20–25 minutes until chicken is cooked through.

- Serve with rice or salad.
- Stores in fridge up to 4 days.
