- 1 1/2 lbs ground beef (85/15)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning (1 oz)
- 1 can diced tomatoes (14.5 oz), drained
- 1 can diced green chiles (4 oz), drained
- 1 can black beans (15 oz), rinsed and drained
- 1 can red enchilada sauce (28 oz), divided
- 1/2 cup sour cream
- 12 small corn tortillas (6-inch)
- 3 cups shredded Mexican cheese blend, divided
- Nonstick cooking spray
Instructions
- Preheat oven to 375°F and grease a 9×13 baking dish.
- Cook ground beef and onion until browned, then drain excess fat.
- Add garlic, taco seasoning, tomatoes, green chiles, black beans, and 1 cup enchilada sauce.
- Stir in sour cream and remove from heat.
- Spread enchilada sauce on the bottom of baking dish.
- Layer tortillas, half beef mixture, and cheese.
- Repeat layers and top with remaining sauce and cheese.
- Cover and bake 20 minutes, then uncover and bake 10–15 minutes until bubbly.
- Rest 5 minutes before serving.
Notes
- Can be assembled 24 hours ahead and refrigerated.
- Freezes well for up to 3 months.
- Add corn or extra beans for more texture and nutrition.
