  • 1 1/2 lbs ground beef (85/15)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (1 oz)
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 can diced green chiles (4 oz), drained
  • 1 can black beans (15 oz), rinsed and drained
  • 1 can red enchilada sauce (28 oz), divided
  • 1/2 cup sour cream
  • 12 small corn tortillas (6-inch)
  • 3 cups shredded Mexican cheese blend, divided
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 375°F and grease a 9×13 baking dish.
  2. Cook ground beef and onion until browned, then drain excess fat.
  3. Add garlic, taco seasoning, tomatoes, green chiles, black beans, and 1 cup enchilada sauce.
  4. Stir in sour cream and remove from heat.
  5. Spread enchilada sauce on the bottom of baking dish.
  6. Layer tortillas, half beef mixture, and cheese.
  7. Repeat layers and top with remaining sauce and cheese.
  8. Cover and bake 20 minutes, then uncover and bake 10–15 minutes until bubbly.
  9. Rest 5 minutes before serving.

Notes

  • Can be assembled 24 hours ahead and refrigerated.
  • Freezes well for up to 3 months.
  • Add corn or extra beans for more texture and nutrition.
